He was known as Carl “The Cuban.” Before becoming the head chef at Sabor in North Bergen, New Jersey, in the year 2002, Ruiz had experience in the kitchen as a sous chef at Dish, a restaurant located in Clifton, New Jersey. In July of 2002, the new proprietor of Stephen’s CafĂ© in North Bergen, New Jersey, took him on as a consultant chef with the purpose of relaunching the restaurant’s business.

When the first decade of the 21st century came to a conclusion, Ruiz uprooted his life and moved to New York City. He took a job as the senior chef at Son Cubano, a Cuban restaurant that was located on West 27th Street in Manhattan but did not last long.
