He was known as Carl “The Cuban.” Before becoming the head chef at Sabor in North Bergen, New Jersey, in the year 2002, Ruiz had experience in the kitchen as a sous chef at Dish, a restaurant located in Clifton, New Jersey. In July of 2002, the new proprietor of Stephen’s Café in North Bergen, New Jersey, took him on as a consultant chef with the purpose of relaunching the restaurant’s business.

When the first decade of the 21st century came to a conclusion, Ruiz uprooted his life and moved to New York City. He took a job as the senior chef at Son Cubano, a Cuban restaurant that was located on West 27th Street in Manhattan but did not last long. The restaurant, which had a capacity of 80 guests, featured live Cuban music and was decorated in a night club style. Ruiz died in his sleep on Saturday, September 21, 2019, aged 44. Atherosclerotic cardiovascular disease was established to be the cause of death after an autopsy was performed. At the time of his passing, he was in Bel Air, Maryland, paying a visit to some friends.
